  1. Back when I still ate meat, over 2 decades ago, I was the same way. Well done and as crispy as possible. I’m sure if I ever went back (highly doubt it), I wouldn’t go much further than jerky and crispy/burnt bacon.

  2. This is one of those things that’s nice because you can step back in stages! Start by ordering “medium well” instead of Well. Then after 10 steaks at that level, step back to medium! A Well done steak is not even a Steak anymore. I used to be a Well person too! I gradually clicked it back till I was eating it as chefs intend!
